Cleaning Pipis

If you aren't on Fraser but simply want to eat like you are, try buying clean pipi's from an asian seafood shop.

If you try the real thing, then follow these instructions to clean your pipi's before cooking them.

Soak the pipi's in clean water or rice water overnight to release all the sand.

Clean the shells of the pipi's with a brush

Keep the pipi's in water all the time until ½ hr before cooking and then transfer into a colander

NOTE: Throw away all the pipi's with open shells.

Pipi with Lemon Pepper

Ingredients

Clean pipis (no sand) in the colander

A lime

Pepper and Salt

Sauce

Mixture of lime or lemon juice with pepper and a bit of salt or any available seafood sauce.

Procedure

Bring a pot of water to the boil (can add a bit of vinegar if you like)

Add the pipis (only ones that have a closed shell - throw out the ones that are opened)

Reduce to a simmer and cook the pipis until the shell opens and keep boiling for 2 minutes more - prolonged heating causes the pipis flesh to be rubbery. Take the pipis out of the water and enjoy the cooked pipis with the lemon pepper sauce and serve while the pipi's are warm. Remove the black stomach lining and eat the white flesh.

Pipis with Black Bean Sauce

Ingredients

Clean pipis in a colander

Black bean paste

Ginger - finely sliced

Garlic - chopped into little pieces

Oil for cooking

Chilli

Chilli Sauce

Method

Warm up oil

Fry garlic and ginger until golden brown

Add the black bean paste and stir

Add chilli and chilli paste

Add a bit of brown sugar

Add the pipis and keep stirring until the pipis are cooked (once the shells open up, cook for a few minutes more)

Serve hot.
